Recipe | Zuppa Toscana Soup

Hi there Rangers,

It has been forever since I made a post, I know, I know. But, today I have something delicious to share with you.

In my family we have this standing tradition, that every week we eat soup in one way or another. We each have our favs, and I think mine might be lasagna soup or Spinach Orzo soup. Do you guys eat soup, and what's your family favourite?

Okay, let's get down to the nitty gritty. Zuppa Toscana, is a very classic soup, I think the first time I tried it was at Olive Garden. Since I don't live anywhere close to an Olive Garden ( I would have to cross the giant pond, we like to call the Atlantic Ocean), I had to recreate it at home.

It is very simple, but both delicious and tummy-warming.

This is what you need:

    • 2 tsp Vegetable oil
    • 500g Ground Turkey, chicken or pork
    • 1 pk. diced bacon
    • 2 small/1 big Yellow onion, chopped
    • 5.5 cups of Chicken broth, or the equivalent boullion cube
    • 500-700g Potatoes, halved and sliced
    • 1.5 tsp Sugar
    • Salt and peber to taste
    • 1 cup Half and half or cooking cream
    • 300g chopped Kale

    This is what you do:

    1. Heat oil over medium-heat in a large pot, add ground meat with a bit of salt and peber and cook until done.

    2. When the ground meat is down, you drain it and set it aside.

    3. In the same pot, you now add bacon, and cook until it starts to take color. When that happens, you add the chopped onion. You keep cooking that until your unions are translucent.

    4. Add chicken stock or boullion, water, sliced potatoes, sugar, salt and peber. You bring the soup to a boil, and then turn the heat down so it just simmers. When it simmers, return the ground meat to the soup.

    5. Let it simmer, but check once in a while  if the potatoes are soft (about 10-15 mins). When the potatoes are almost done, add kale and half & half. Stir well.

    6. Let it cook until potatoes are fully done and the kale is tender.

    7. Serve warm.

    You can make this in several different ways, depending on what meat you end up using. In this version I used ground pork 🐷.

    I ate it the day after for lunch, and it was still super yummy and very satisfying. I would not recommend freezing it, the potatoes and kale could end up being very mushy.
